Cook Pork Crackling on your Weber - quick guide
To create that amazing pork crackling you will need to use high temperature so it is extremely important to preheat the barbecue longer to get it really hot.
Turn your gas on and ignite all burners.
When preheating, leave the outside burners on high, and the inside burner on low.
Tip: Score the skin just into the fat layer, ensure the skin is completely dry and rub a small amount of olive oil into the skin with a generous amount of salt. *Avoid pork that has been cryovac’d
Cooking time is 1 minute per millimetre (diameter) if your pork is 90 millimetres in diameter, it will take approx. 90 minutes to cook to medium.
Cook with the outside burners on high & the middle burner off.
Place the pork in the middle of the BBQ and close the lid.
To make your apple sauce, place 4 diced apples, lemon juice, castor sugar & water into a casserole dish or saucepan.
Use high heat for 10 minutes stirring every few minutes, and then once the water has evaporated, turn it down to low and continue to cook and stir until the apples have softened.
